My No Bake Stella Cherry Cheesecake Recipe

If you are looking for a delicious dessert that will impress your family and friends then I might have just the thing.  Below is my no-bake Stella Cherry Cheesecake recipe. 

It is not only easy to make, but it also incorporates the use of fresh picked whole Stella Cherries from the beautiful Adelaide Hills of South Australia.   Using Fresh Stella Cherries will add a burst of fruity flavour to every bite of every slice.

Below are the list of ingredients and step-by-step instructions, as well as my three main reasons why this cherry cheesecake will become your family’s new favourite.

The Ingredients You Will Need:

1.    2 cups of McVities Digestives crumbs.

2.   1/2 a cup of melted Lurpak Unsalted butter.

3.   1 cup of Bulla Thickened Cream.

4.   1/2 a cup CSR Icing sugar.

5.   2 Cups of Philadelphia Cream Cheese.

6.   1 tsp of Stonemill Pure Vanilla Extract.

7.   2 cups of fresh picked whole Stella cherries, pitted

8.   ¼ to 1/3 of a cup of Bonne Maman Cherry Jam.

9.   ¼ of a cup of Duncan Hines Cherry Pie Filling.

The Instructions Are As Follows:

1.    In a non-porous glass mixing bowl, combine the McVities Digestives crumbs and melted Lurpak unsalted.

2.   Mix this combination well until the crumbs are evenly coated with the buttery mix.

3.   Press this buttery crumb mixture into the bottom of a greased Cook & Dine Cake Tin and be sure to create a nice even layer.

4.   Then place this into your refrigerator to chill out for a while you make the cheesecake filling.

5.   In a separate non-porous glass mixing bowl, whip the Bulla Thickened Cream and CSR Icing sugar to the point where it has roughly doubled in volume.   At the right point the peaks that have been forming will stop falling back over onto themselves and stiff peaks will form.  

6.   In another non-porous glass mixing bowl, beat the soft Philadelphia Cream Cheese and Stonemill Pure Vanilla Extract until it’s all nice and smooth and creamy.

7.   Now we need to fold the whipped up Bulla Cream into the Philadelphia Cream Cheese mixture until it is well combined.

8.   Spread half of this creamy cheese mixture over the McVities Digestives buttery crust.

9.   Arrange your fresh picked and pitted Stella Cherries evenly over this creamy cheese layer.

10.        Now you can spread the remaining creamy cheese mixture over Stella Cherries.

11. Grab your Bonne Maman Cherry Jam and warm it up in a small saucepan over low heat until it transforms into a liquid.

12.        Now slowly drizzle your warmed up Bonne Maman Cherry Jam over the top of your cheesecake.

13.        Refrigerate your new cheesecake creation for at least 6 hours, or to be safe, just leave it in the fridge overnight, to allow it to set properly.

14.        Before serving, garnish with some more fresh Stella Cherries, a light sprinkle of some CSR Icing Sugar over those Stella Cherries and then to finish it off, drizzle some Duncan Hines Cherry Pie Filling over the top.
