a)   1 1/2 cups graham cracker crumbs

b)  1/2 cup melted butter

c)   2 cups cream cheese

d)  1 cup sugar

e)   4 eggs

f)   1 teaspoon vanilla extract

g)   1 1/2 cups diced Mareeba Sweet Pineapple

h)  1/2 cup shredded coconut

Instructions:

a)   Mix the graham cracker crumbs with melted butter and press onto the bottom of a springform pan.

b)  In a separate bowl, beat the cream cheese and sugar until creamy.

c)   Add the eggs one at a time, mixing well after each addition.

d)  Stir in the vanilla extract, diced Mareeba Sweet Pineapple, and shredded coconut.

e)   Pour the mixture into the prepared crust.

f)   Bake at 325°F (160°C) for 55-65 minutes or until the centre is slightly jiggly/wiggly.

g)   Allow the cheesecake to cool before refrigerating for at least 6 hours.
