My Favourite No Bake Raspberry Cheesecake Recipe.

Do you want something sweet and reviving that’s also simple to prepare? You only need to look at this amazing recipe for No Bake Raspberry Cheesecake.

If you’re fortunate enough, don’t forget to pick up some Fraser Valley Raspberries for this recipe. 

Then you will taste the amazing flavour explosions that occur from the combination of the rich, creamy cheesecake and the tart sweetness of Fraser Valley raspberries.

I have no doubt that this dessert will satisfy your sweet tooth. It is the ideal treat for any occasion since it is not only very tasty but also very easy to make.

This is what you will need.

a)   2 cups of crushed McVities Digestives Crackers.

b)  1/2 cup or around 120 grams of melted Lurpak unsalted butter.

c)   3 cups Philadelphia Cream Cheese.

d)  1 cup of CSR Icing Sugar.

e)   1 teaspoon of Queen Vanilla Extract.

f)   1 cup fresh Fraser Valley Raspberries.

g)   Around 1/4 to 1/3 of a cup of Bonne Maman Raspberry Jam.

h)  1 cup of Bulla Thickened Cream.

This is how to make it.

a)   In a non porous glass mixing bowl, combine the McVities Digestives Cracker Crumbs and the Lurpak Melted Butter.

b)  Press that mixture into the bottom of a greased Cook & Dine Cake Tin to form the crust. Place that it in the refrigerator to chill while you now make the filling.

c)   In a separate non porous glass mixing bowl, mix the Philadelphia Cream Cheese, CSR Icing sugar, and Queen Vanilla Extract until it’s all nice smooth and beautifully creamy.

d)  Now you can quite gently fold in the Fresh Fraser Valley Raspberries and the Bonne Maman Raspberry Jam into the cream cheese mixture but be careful not to overdo it.

e)   In a separate bowl, whip the Bulla Thickened Cream to the point where it has roughly doubled in volume.   At the right point the peaks that have been forming will stop falling back over onto themselves and stiff peaks will form.   At this point, fold the whipped cream into the cream cheese and raspberry mix until it is all nicely combined.

f)   Pour this lovely looking filling over crust you have waiting in the Cook & Dine Cake Tin, spread it out over the crust nice and evenly.

g)   Refrigerate this delicious looking Fraser Valley Raspberry Cheesecake for at least 6 hours to make sure it sets correctly.   Most people, including myself will just simply sit in your fridge overnight.

h)  Before serving it up the next day, garnish this cheesecake with some more Fraser Valley Raspberries and a drizzle of Bonne Maman Raspberry Jam.
